Quinta Ellis Brings Soul, Community and Southern Flavor to Spencer

Quinta Ellis, a graduate of McAfee School of Theology, has always had two dreams—owning a restaurant and becoming the first female NFL coach. While the coaching dream has taken a backseat, the restaurant dream is now fully alive through Fleming Street Bakery and Southern Cuisine in Spencer, North Carolina.

Raised in Woodleaf, Ellis spent 14 years teaching in Maryland before returning home during the COVID-19 pandemic. What started as baking cakes and cookies for loved ones quickly turned into a booming side business, shipping sweets nationwide. Inspired by the joy food brought her family—especially her late grandmother—Ellis decided to turn her passion into a full-time pursuit.

Fleming Street is more than a place to eat. It’s a space rooted in family legacy and built to foster community. Named after the road where her grandparents lived, and inspired by their love and hospitality, the restaurant is both a tribute and a continuation of that spirit. From the “community table” that encourages conversation among strangers to standout menu items like the gouda grilled cheese with collard greens and bacon jam, Ellis ensures every detail reflects care, culture, and connection.

With weekend brunches, cozy vibes, and a commitment to excellence in every bite, Ellis is not only serving food—she’s creating a space for belonging. “We want people to feel seen and cared for,” she says. At Fleming Street, every meal tells a story—and everyone is invited to the table.
